2019 Journeyman Rose’ – The core part of our Chardonnay production has always been centered on concrete eggs. Our Rose’ follows this same commitment to the use of the concrete egg shaped fermenter. Produced 100% with this vessel, allows for suspension of the lees (yeast) so that the wine has more palate weight. In addition to the use of this special and rare fermenter type, we also applied a layered approach to make this wine by using up to four pristine sources. The majority of this wine is from bleeds, which is removal of juice from freshly crushed red grapes, however about 40% of this wine was from final thinning passes on our hillside lots which were pressed off at 18 – 20 Brix. The result is a wider selection of grapes in terms of sugar and acid level. The wider the selection the greater the spectrum of flavor. The hillside lot component provides a gentle bump of natural acidity and minerality combines with bing cherry and rose petal aromas.
